I was reminiscing the other night about the good old days when I could devour spaghetti, penne pasta, and macaroni – all kinds of noodles.  The sauces were made with rich creams, oils and drenched in butter.  Rice isn’t a noodle, but I dream about it, too.  Rice was also cooked with butter and served with gravy.  I was young and not worried about cholesterol and high blood pressure.  I was roller skating every Sunday and dancing every chance I got.  So, who cared about all those calories in those noodles?  Now I know better, so I do better.  I’m not saying I love it, but I am learning to like it.  Like what?

Whatchamanoodles!  Vegetable alternatives!  Riced Cauliflower!  Spaghetti Squash!  Zoodles – Zucchini Noodles!  They are a fresh and healthy choice instead of pasta.  I read that these pasta substitutes are a fun way to increase the number of vegetables we eat, especially children.  I say especially adults.  Eating should be fun!  We still like to twirl food around our forks and then watch ourselves unwind it as we fill our mouths.  So, bring on the Zoodles!

Chef Daphne continues to provide Delishes Dishes to help us stay on our journey to eat healthily.  Who can’t wait to eat the Chicken Fajita Zoodle Bowl pictured above?  I can’t.  I’ve got a freezer full of Zoodles and Chicken in the freezer.  And you know what I’m going to do?  I’m taking it to Chef Daphne so she can cook it for me….
