I got up this morning and my phone said it was 39 degrees! I wanted to shake it like dice so the 3 and the 9 would change to 93 degrees! Unfortunately, time doesn’t work like that. It just keeps on moving forward and if things go our way, we keep moving with it. It is no longer August, but the end of October. It is time for the leaves to start turning golden and apple red, the air to be crisp, and the fireplace to be lit. It’s time to drive through piles of blown leaves that my neighbors failed to rake. It’s time for thick wool sweaters and windbreakers and flu shots. It’s time for Soup!
Onion, Vegetable, Chicken Noodle, Tortellini, Taco, Broccoli Cheddar – I could go on and on. I love soup at any time of the year, but I especially love it as Autumn days become Winter evenings. As I’ve stated before, I like cooking to be easy. That’s why my slow cooker is my favorite appliance. (The hard stuff calls for Chef Daphne.) So, this morning I followed the Soup Blueprint so a hearty soup would be waiting in my slow cooker when I got home. I don’t remember where I got this recipe – somewhere on the internet – but I do love it.
§ 3 cups of any type of dry bean
§ 1 cup whole grain of choice (Like rice or barley)
§ 3 cups of Vegetables of choice (frozen mix, canned, or fresh diced)
§ 2 cups of Tomatoes (canned, stewed or diced, or fresh — diced)
§ Olive oil (2 Tbsp)
§ Savory seasonings (garlic powder, onion powder, celery salt, ground coriander, ground cumin, bay leaves, oregano, basil, cayenne pepper, pepper, salt).
§ If you like spice, add diced chilis and chili powder.
§ Water or Low Salt Broth (Vegetable, Beef or Chicken) – to cover the rest of the food and fill to top.
§ If I’m feeling like a carnivore, I sometimes brown a pound of ground turkey breast or 98% ground beef and add it to the mixture.
Pour all ingredients into the crockpot and let it cook on low 8 hours or overnight. You will have a delicious hearty soup to make you love the chilly evenings and feel really “Souper”!
