Guest Contributor Series: The Power of Green

Empowering!  Influential!  Life-Changing!  No, I am not talking about money.  Remember, this is a food blog!  I’m talking about green food.  Vegetables, vegetables, des legumes!  Chef Daphne sent me a picture of a dish she had prepared for dinner one evening.  It had cucumber, edamame, spinach, carrots, cabbage, etc.  I wanted to just eat the picture! And I wanted to eat healthier!

I believe that eating right is easy when food is tasty, but I also believe food tastes even better with a beautiful presentation.  When I see a fresh salad with crisp romaine lettuce, red cherry tomatoes, and bright broccoli florets, I can’t wait to devour it!  Green food makes me think I can run for miles, climb mountains and swim the Pacific Ocean.  That may not be realistic, but green is powerful.

Vegetables are low in calories.  You can eat them all day long on WW and not use a single point.  They are full of fiber, which is great for losing weight.  They are important sources of nutrients.  Vegetables may reduce the risk of certain diseases.  Celery and Carrots are a convenient snack.  Vegetables add color to what could otherwise be a dull plate.  And by eating more vegetables, you might save some green -$$$!

So, the next time you want to annoy your co-worker just for fun, pull out your bag of celery and carrot sticks and start crunching.  Make your kids eat their green vegetables before they can play on their tablet.  Delight your friends by having Chef Daphne make this beautiful green bowl of deliciousness.  Enhance your life with the Power of Green!
