Yummy Spring Recipes

Spring is here, and summer is soon to follow. With the new seasons come delicious seasonal  fruits and veggies for you to try new recipes with. If you are looking to experiment in the kitchen and add some new foods to your diet, then this is the post for you! These recipes are wonderful to make with the seasonal fruits of spring and summer, so try them while you still have the chance in 2018.

Strawberry Rolls

The first recipe you should be looking forward to trying this spring are these delicious Strawberry Rolls with a lemon cream cheese glaze. A perfect combination of yummy yeasty rolls and refreshing sweet fruit. The recipe calls for a 15 ounce can of premium strawberry pie filling, but if you have your own strawberry pie filling recipe, feel free to use that. You could also try this recipe with different fruits like raspberries or peaches. Just get pie filling or make your own and substitute it in for a yummy spring dessert.

Honey Roasted Carrots

The next recipe you should try this spring are these fantastic honey roasted carrots. These carrots are a perfect balance of savory and sweet. The recipe calls for small whole carrots, but you could substitute baby carrots if you desire. Just remember to adjust the cooking time. If you are looking to add a pop of color to this dish, try using rainbow carrots that come in various colors of the rainbow. 

Pineapple Fried Rice

Thai Pineapple Fried Rice is full of pineapples, peppers, carrots, cashews, and more. This delishes recipe can even be served inside the hollowed-out pineapple if you make it with fresh pineapple you cut yourself. While full of various vegetables and fruit, this recipe does contain cashew, so make sure to take those out if you are allergic. This recipe is a great vegan meal, but one can add some grilled chicken or steak to the mix to spice up the flavor.

Grilled Apricots with Brie, Prosciutto and Honey

An additional recipe you should be excited to try is this enticing recipe for grilled apricots with brie, prosciutto, and honey. Throw the apricots on the grill until the sugars in them caramelize and then top with brie, prosciutto, and a drizzle of honey. This recipe is another one that you can personalize and make substitutions on fairly easily. If you don’t have access to apricots, try peaches or plums. This yummy spring snack is perfect for an afternoon in the backyard or out by the lake.

Ultimate S’more Sandwich

The final recipe you should try this spring is an ultimate s’more sandwich which is perfect for sitting around the campfire or out in the backyard telling stories. This recipe is simple and easy. You can use mini-, regular, or mega- marshmallows and feel free to switch out the Nutella for a different chocolatey spread or any other nutty spread you enjoy.

First, butter one side of each slice of bread before spreading Nutella or your spread of choice on the other side. Once the bread is evenly coated, place an even lay of marshmallows on one Nutella spread side and place the other piece of bread on top. To cook, either grill or cook over the fire until marshmallows are melted, or bread is golden brown. Then you know what comes next – enjoy!
