Quick Fix for a Missing Ingredient

You’ve made your grocery list and head to the store. You get to the register and double-check: every item on your list is checked off. Done! Now you’re in the kitchen preparing this dish and “oh no!” You don’t have ingredient “X”.¬† How could you miss it?! It happens….
So what are you going to do to fix it? Well, it depends on what “it” is. I was making a marinade and the recipe called for apple cider vinegar. I didn’t have apple cider vinegar but I had rice vinegar. I used it! You can actually use balsamic vinegar, white vinegar, apple cider vinegar, rice vinegar, etc, interchangeably. Especially if you’re making a marinade or even a vinaigrette. That’s what I do! In fact, I’ve often used pickle juice when I needed some type of vinegar or acidity because what’s in pickle juice? Vinegar! There’s so much flavor in pickle juice, I often save the juice for later use. It’s great for use in a salad dressing!
I often make this quick salad dressing by combining mayonnaise and pickle juice. Start with a half a cup of mayo and add enough pickle juice to bring it to the consistency you like. A little salt, pepper and garlic won’t hurt. Delish!

Another thing I’ve done when I don’t have honey is to use maple syrup instead. Or vice versa. I’ve even used jelly if that’s all I have on hand because in my mind it’s sweet and that’s what I needed at the time, something sweet! Try it you might like it!
All in all, you have to experiment with something to know if it will work or not. If it works do it again! If not, don’t.
