Blend the raspberries and champagne into a smooth puree and then discard the seeds. Then pour the cream and sugar into a saucepan and warm it gently for 2 ½ minutes, while stirring continuously. Turn off the heat and add the blended raspberry-champagne puree. Pour the cooled mixture into two cups, sprinkle raspberry pieces and chill overnight until set. Remove the mixture and add the shortbread biscuits, then serve.

1/3 cup of heavy cream
1 lb linguine
½ cup small basil leave
¼ cup finely grated Parmesan
3 tbsp. fresh lemon juice
1 cup of spicy tomato sauce
Blend together grated Parmesan and heavy cream to a fine smooth puree, then refrigerate if not in use. Boil linguine following the instructions on the package. Drain the water but leave a little for later and add fresh lemon juice. Heat the tomato sauce and toss in the pasta, cooking water and basil leaves into the pot and stir. Sprinkle the Parmesan on top and serve.
